Struggling to fill empty seats since moving into Target Field, the Twins organization has decided to bring baseball to the people through the trendiest conduit of late: the omnipresent food truck. Serving stadium food outside the stadium is certainly creative, and a lot of effort has gone into building a killer roster of concessions choices.Partnering with Chameleon Concessions to pimp the truck itself (who’ve decked out a majority of the downtown Minneapolis lunch truck crowd, from AZ Canteen to the Rusty Taco), it remains to be seen which Target Field eats will jump in on the food truck bandwagon. Our imaginations are running wild: mobile Vincent burgers! Kramarczuk’s on the go!Now if only they could get that creative with the pitching lineup . . .
